Vegetable Stock


Ingredients

1 Tbsp olive oil
1 onion
2 stalks of celery
2 carrots
2 spring onions
4 cloves of garlic, minced
1 cup of parsley or coriander leaves
1 sprig of thyme
2 bay leaves
1 tsp salt
6-8 cups water

Optional
1 tsp marjoram
1 small Potato or peelings


Method

Add oil to a pot
Add all ingredients (chopped) without water to the pot
Heat on high for 10 mins, stirring frequently
Add water, bring to boil (may take about 30 mins), then simmer for 30 mins
