Cream of Broccoli Soup



Ingredients


2 cup broccoli florets and diced stalks
1 small yellow onion
1 cup water
1 cup vegetable stock or 1 additional cup of water
1 cup low fat milk
1/2 tsp celery salt
1/2 tsp sugar

Method

Heat 1 cup water in a pot
Add broccoli and chopped onion and heat until tender
Remove 1/2 cup of broccoli heads and keep aside
Continue to heat until broccoli and onion are soft
Remove from heat, strain and add to blender

Add celery salt, sugar, milk to blender
Blend until smooth paste

Pour into pot and add back the 1/2 cup tendered broccoli florets
Simmer on Med-low for 20 mins
