Vegetable Lasagna

Baked Vegetable Lasagna


Ingredients

Lasagna Multigrain Sheets 

Eggplant - 1 small
Zucchini - 1
Carrot - 1 grated
Capsicum - 1/2 cup chopped
Cheese - grated
Broccoli - 1 cup cut into small florets
Marinara - 1/2 bottle
All purpose flour (Maida) - 1 cup
Onion - 1/2 or 1 small - chopped
Oil/Butter - 1 Tbsp
Salt - to taste
Pepper - to taste

Method

Cut eggplant and zucchini into thin slices and grill or pan sear
Prepare white sauce with Maida, Onion, Oil/Butter

Bake

Consider covering baking bowl with aluminum foil to prevent lasagna from drying out

400 deg F for 30-40 mins if vegetables were pre-cooked, otherwise 40-50 mins (with additional water sprinkled)
